Cashew Hummus and crackers with Fresh Herbs
This snack idea was inspired by our son Wren. He loves plucking fresh leaves from our herb garden and snacking on them all day long...one day we were having a picnic and he decided to put fresh mint and lemon balm leaves on his hummus and cracker bites! It tasted delicious!
1 small can of chickpeas drained (Garbanzo beans) *Set the aquafaba aside
1/2 cup of cashews (soaked overnight)
1/2 lemon juiced
2 tbsp of olive oil
2 tbsp of tahini
1 tsp of paprika
1/2 tsp of garlic powder
1/2 Himalayan salt
a few handfuls of freshly gathered herbs from your garden such as mint, lemon balm, thyme, rosemary, chives
Cashew Hummus
Place all ingredients, except for the herbs, in a food processor and process until smooth. Slowly add a tbsp of the aquafaba at a time and keep blending until you reach your desired consistency. Drizzle with oil and a pinch of paprika for serving. Enjoy with crackers of your choice!
Herbs
We prefer certain herbs as they are usually. However, for the rosemary and chives, I would chop those up a bit before sprinkling on top!
